As the nights are drawing in, I thought another tasty recipe could be just the ticket to keep the cold at bay! This is a very straightforward recipe that uses basic organic ingredients. Odette Pearce makes her own yogurt from organic milk, but shop-bought organic yogurt works just as well. She also grinds her own flour from organic wheat bought at her local natural health store. The taste of homeground flour is lovely, and would certainly be more nutritious. A great idea. If you don’t own a grinder, normal unbleached organic flour is fine.

The one statement Odette makes that really stands out is this:

“There are a lot of things we can’t control – water quality, pollution and so on. At least I can control this (the food my family eats).”

It is an empowering notion to know that you are predominantly in charge of what you feed yourself and your family. The decisions lie with you, and you reap the benefits (or not!) from those foods.

Odette buys mainly organic foods, but to keep her costs down she buys in bulk. For most of us on a budget, this is another worthwhile point to note. Clearly you can’t really buy in bulk from the supermarket (well not in the UK) but plenty of organic wholesalers or vegetable box suppliers will allow consumers to benefit from bulk buying.

Ingredients:

  • 2 cups unbleached organic flour (1 cup is approx 5 ounces or 125 grams),
  • 2 tsp baking powder,
  • 1/2 tsp salt,
  • 1/2 tsp bicarbonate of soda,
  • 3 tbsp organic brown sugar (try unrefined soft brown sugar, and use 4 tbsp),
  • 1/4 lb (approx 110 grammes) organic unsalted butter chopped,
  • 3/4 cup of plain yogurt.

Method

Start with flour and add each ingredient in sequence. Once you have added the butter, rub it in with your fingers. Once fat is well rubbed in, add the yogurt and mix all the ingredients until you have a dough.

Turn out onto a floured surface or board. Divide mixture into two. Then roll the dough out and cut into triangles with a palette knife.

The triangles are then placed on a baking tray and baked in the oven at 450 degrees F (230 degrees C) for 10 – 12 minutes. Enjoy eating when still warm. My personal preference is with lots of organic butter and honey. A simple recipe like this takes very little time and money to make, and adds a whole lot of enjoyment to an organic lifestyle.

For those of us who don’t eat wheat, simply use gluten free organic flour.
